Whip It Up Wednesday

Each week I would love to share a new recipe.  I love to bake and cook.  I am by no means an expert rather someone that enjoys tinkering in the kitchen and using her kitchen aid mixer.  This week I wanted to make something for the kiddos to snack on when they got home from school.  So I thought granola bars would be great.  I'm a HUGE fan.  They have the best recipes and I love reading the reviews and checking out the pictures.  So here is the new recipe I decided to try.

Easy Granola Bars
  • 3 cups quick-cooking oats

  • 1 (14 ounce) can sweetened condensed milk

  • 2 tablespoons butter, melted

  • 1 cup flaked coconut

  • 1 cup sliced almonds

  • 1 cup miniature semisweet chocolate chips

  • 1/2 cup sweetened dried cranberries

  • Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
    2. In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries with your hands until well blended. Press flat into the prepared pan.
    3. Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.
     I would give it 3 out of 5 stars.  Not the best granola bars, not the worst.  They were a little sweet and softer than most granola bars, which I liked. They weren't super healthy, the recipe calls for sweetened condensed milk but they were by no means super fattening.   So although I would have loved a nice chocolate chip cookie or linzer tart, I opted for the granola bars for the kids.  They always win don't they!
